STRAWBERRY FROSTING
A delicious addition to the strawberry cake.
Ingredients
  1. 1/4 butter, softened
  2. 1 (8 ounce) package cream cheese, softened
  3. 1 (10-ounce) package frozen strawberries in syrup, thawed and pureed
  4. 1/2 tsp strawberry extract
  5. 7 cups confectioner's sugar

Instructions
  1. In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy.
  2. Beat in 1/4 cup of the strawberry puree and the strawberry extract. (The rest of the puree is leftover but can be used in smoothies or on ice cream for a delicious treat.)
  3. Gradually add confectioners' sugar, beating until smooth.
  4. Spread frosting in between layers and on top and sides of cake.
  5. Garnish with sliced fresh strawberries, if desired.

STRAWBERRY CAKE
A tasty dessert for the spring and summer.
Ingredients
  1. ¾ c milk, room temperature
  2. 6 egg whites
  3. 1 tsp vanilla extract
  4. 2 1/3 c cake flour
  5. 2 c sugar
  6. 3.5 tsp baking powder
  7. 1 tsp salt
  8. 1.5 sticks unsalted butter, softened
  9. 1 small box of vanilla pudding
  10. 1 small box of strawberry jello
  11. 1 cup strawberries, pureed
  12. 1 cup sour cream

Instructions
  1. Preheat oven to 350 F.
  2. Grease, flour and line two 9-inch cake pans.
  3. Sift together the flour, baking powder, salt, pudding, and strawberry jello. Set aside.
  4. Cream butter in a large bowl until light and fluffy for 2 minutes on medium speed.
  5. Add sugar and continue to mix until light and fluffy.
  6. Add egg whites one a time. Mix well.
  7. Add vanilla extract.
  8. Reduce the mixer speed to low and add the dry ingredients alternately with the sour cream and milk beginning and ending with the flour. Be sure the mixture is completely blended after each addition.
  9. Finally add I cup of strawberry puree.
  10. Pour the batter into the prepared pans. Bake in the preheated oven for about 35-40 minutes or until an inserted toothpick comes out clean.
  11. Let cakes cool completely on a rack before frosting.
